The Structure of the European Spice Market

The European herb, spice and seasoning market is estimated at ECU 1,675.9 million (US$ 2,229 million): 44% of this is represented by the retail trade, 41% by spices for industrial use and the remaining 15% goes into catering (see Table 1). There is considerable variation between member states largely dependent on the importance of the processed food sector. In all cases the industrial and institutional (catering) sector combined exceeds the retail trade.
